One of the simplest ways to distinguish between pulao and biryani is the time taken to prepare. Biryani takes much more time to prepare in comparison to pulao. Biryani is cooked on a very low flame to provide appropriate texture, flavor, and sweetness. On the other hand, less time is taken to prepare pulao, which makes it ready in less time.

One of the major differences between pulao and biryani is the use of layers during preparation. During the preparation of biryani, layers are used that comprise different components of the dish while there is no layer in the preparation of pulao. When one is preparing biryani, there are layers of rice, meat, vegetables, and another layer of fried onion while in the preparation of pulao all the components are mixed and are cooked without making layers.

Biryani is made through the drainage method of cooking while pulao is made by using the absorption method of cooking. In the preparation of biryani rice is boiled until it is ready which means the remaining water is completely drained and then other food components like meat, vegetables, and fried onions are added in layers in it. On the other hand, pulao is made by boiling the rice and other vegetables in the dish.

The spices used in the preparation of pulao and biryani can be very distinguished. Biryani is made with more spices while pulao is made with modest or no spices at all. Some of the main spices used in Biryani include chili powder, garlic, ginger, green chilies, and others while pulao does not have many spices except dried raisins and nuts.
