What is Durum?

Durum is a by-product that is produced during the making of semolina wheat. It has a pale yellow color while all other whole wheat kinds are often tan or brown. The wheat itself has a ground texture whereas the wheat flour has a fine texture so durum wheat flour dough is soft. This is the reason durum flour is usually easy to curve and mold. It is usually used in spaghetti, noodles, and lasagna. It is considered to be the most significant kind of wheat in terms of Nutrition because it is the only kind of wheat that is tetraploid. It is high in protein and has a low gluten content. It also contains a high percentage of proteins and minerals in comparison to other whole wheat grains. 

What is Semolina?

Semolina is commonly made from the wheat middling of durum wheat. It often has a yellow hue but this color can vary with the usage of different wheat. If the wheat is softer than durum wheat then the color of Semolina may appear almost white. If the wheat is usually coarse then the making of wheat flour is also coarse. The dough made from semolina wheat flour is often held together by the coarse texture and this becomes more strong on heating. This is the reason it is used for making different shapes of pasta like penne, macaroni, etc. It is also used in other delicacies like puddings and cereals. As Semolina comes from cereals, it takes more time to complete the digestion. This is the reason it can be used as a perfect component for weight loss diet programs. Main Differences between Durum and Semolina

  • Semolina is the wheat that comes from the middling of the durum species whereas durum is a special species of wheat that is the only tetraploid wheat.
  • Durum wheat has a ground texture which makes a soft dough that is easily moldable whereas Semolina wheat has a ground texture that makes good dough and strengthens on heating up. 
  • Durum has a fine texture whereas Semolina has a coarse and heavy structure. 
  • Since durum wheat has a fine texture so its dough is soft and can be blended and curved easily while semolina has a coarse texture so its dough is thick.
  • Durum flour is used in making noodles and dough for spaghetti and lasagna whereas Semolina flour is used for making different shaped pasta dough like Macaroni.
